Menu Monday

Okay, so it's Tuesday. So sue me.

But I haven't done a Menu Monday in awhile, so let's just pretend, shall we?

This week is a "shoestring budget" week, sort-of.

The meals are fairly easy and fairly cheap, so don't be expected to be overly wowwed. ;-)

MONDAY

Spaghetti with garlic bread

TUESDAY

Cheese and bean quesadillas with homemade Mexican-style rice

WEDNESDAY

Vegetarian chili (slow cooker) with homemade cornbread (from scratch)

THURSDAY

Grilled cheese sandwiches with homemade minestrone soup

FRIDAY/SATURDAY

One of these nights will be Date Night for myself and Antonio, so on that night the kiddos have an easy dinner:

Take-out pizza

Whichever night we're all home for dinner, we will have:

BREAKFAST FOR DINNER, peeps!!
