Let's Make Dinner! Honey Chicken Recipe

So you're looking for some dinner inspiration?

I've got a DELICIOUS recipe for you to try!

It is a slow cooker meal...and made my entire house smell so good!

Everyone, kids included, LOVED it!

I also doubled the recipe, as you'll see in the video, in order to freeze the extra one to eat when work slows down and our grocery budget gets waaaaaay low.

(raw chicken can be frozen for 9-12 months, ladies, so you need to be doing this, too!! That way when you don't have time to cook, just thaw it out and toss it in your slow cooker! BAM! Dinner is ready!)

HONEY CHICKEN

1 small onion, diced
2 cloves garlic, minced
1/2 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2 Tbsp vegetable oil
1/4 tsp crushed red pepper flakes
2 lbs boneless skinless chicken thighs
Salt & Pepper, to taste
1 green onion, thinly sliced & sesame seeds...both for garnish
(I actually forgot the green onion and sesame seeds...it still turned out GREAT!)

Season your chicken thighs with salt and pepper. I actually couldn't find my pepper...hahaha...so I just used salt. It turned out fine.

Place the seasoned thighs in a slow cooker (be sure to spray your slow cooker with nonstick spray first!)

In a large bowl, combine the first 7 ingredients.

Pour the honey mixture over top of the chicken thighs.

Gently stir the thighs to be sure that they are coated with the sauce.

Put your lid on your slow cooker and cook your chicken on LOW for 3 1/2 hours.

*Enjoy how delicious your home will be smelling!*

After 3 1/2 hours, remove your thighs (use a slotted spoon) and shred them into small pieces. Put the shredded chicken back in the slow cooker with the sauce.

Cook on LOW (or just turn it to WARM) for an additional 30 minutes.

Serve immediately...garnish with green onion and sesame seeds (if you want. I didn't. Still was delicious!)

I served mine with egg noodles but this would probably taste amazing over some rice!
