Mom's Menu 4/18-4/23


Ya'll ready for this week to be upon us? Gah! It seems like this weekend was gone in the blink of an eye. So today starts a whole new menu.

Last week's menu was a bit extravagant. And I was overwhelmed with a really sick little guy and didn't get to make all of my dinners, so a couple of them will be repeats this week because I need to get those meals eaten. So that's why you're seeing double. ::wink::

I'm also cutting down on the super fancy smoothies everyday. I am not a big smoothie person. And I think that last week's smoothies contained a tad too many processed ingredients (cottage cheese, cartoned egg whites, etc), so this week will be much simpler, in comparison. But I am switching out the smoothies for fresh juices...so many "simpler" isn't the right word...ha.

Not too many recipe links because I'm just trying to go the simple route this week (but you'll notice that any recipe links will be a different color than the rest of the post).

Roasted Sweet Potatoes, green beans & carrots
(okay, so when I make roasts, I throw in potatoes and carrots to roast with the meat..with some onion soup mix...our favorite part of the meal were those vegetables! So, this time I'm cutting out the meat, subbing the white potatoes for sweet potatoes to cut down on carbs and adding green beans...covering with water and onion soup mix and roasting! I am so excited to see how this goes!)

Zucchini Alfredo
(my girlfriend, Nichole, has been encouraging me to start using my veggie spiralizer again to make zoodles...zucchini noodles! A healthy low-carb option!)

(I have made this recipe before and everyone loved it! I always omit the jalapeno...after a really bad experience I had involving my seeding and chopping some jalapenos with my bare hands...and then trying to take out my contacts hours later. HOLY MOTHER OF GOD!!!!! Do NOT ever ever ever EVER do that. EVER. I mean, I washed my hands after handling the peppers several times with kitchen soap. Washed them again before taking out my contacts. But it didn't matter. I thought I was blind. I called my mom, screaming, that I had blinded myself by way of jalapenos. So..yeah. No more fresh jalapenos for me, thank you very much. The chowder still turns out great.)
