Mom's Menu 4/25-5/1
Hey, guys! It's Monday again....so let's start dishing out a little meal time inspiration, shall we?
This week's menu is completely vegetarian...but don't let that stop you from trying them out! I have some big eaters in my family, so I try to make my meals hearty and delicious, as well as healthy!
Dinner on Day 1 is a repeat from last week because, if you follow my FB page , you know that Austin was sick last week. One night I just couldn't be bothered to make dinner....I was just too wiped out...so I had Antonio pick up take-out and I saved the ingredients for this week.
I am also excited because I bought a new food processor (this is the one I bought)...I've been needing a new one but finally pulled the trigger, so that I can chop up the veggies for our lettuce wraps and to make the cauliflower rice! I am so excited to get it...it's supposed to be coming today! (correction...I forgot that they changed the delivery date...funny how Amazon's been doing that a lot more lately. Boo! It'll be here tomorrow. I'm frustrated because I could've just ran to Walmart and bought it...but love how convenient it is for Amazon to just bring it here to me.)
You'll notice that I don't label the daily plans with specific days...because I need flexibility.
